Sweet Corn Pork Pozole Recipe


Posole with TRUTH IN SNACKS™ Supersweet Corn

  • 1-1/2 lb. pork (shoulder, loin or similar cut, without bones), cut into 1/2 inch pieces
  • 4 Tbsp canola oil, used in 2 equal portions
  • 1 Large onion, yellow or white, chopped into 1/2 inch pieces
  • 3 Tbsp garlic powder
  • 1 Tbsp ground coriander
  • 1 Tbsp ground cumin
  • 1 Tbsp ground epazote or adobo seasoning
  • 1 Tbsp Aleppo chili powder or similar chili powder
  • 15oz can diced tomatoes
  • 15oz can hominy, white or yellow, with water conserved
  • QT chicken broth
  • 1/2 cup TRUTH IN SNACKS™ Supersweet Corn


In a large high-side saucepan (8 QT preferred) heat 2 Tbsp canola oil. Sauté pork on medium heat until browned, then set aside. Add remaining 2 Tbsp of oil and sauté onion on medium heat until golden and clear. Add garlic, coriander, cumin, epazote and chili, cover the saucepan, then simmer on low until the spices moisturize and “bloom.” Remove cover, then mix the onion and spices. Add the browned pork, diced tomatoes, hominy with water, chicken broth and TRUTH IN SNACKS™ Supersweet corn. Mix all. Simmer for 20 minutes, then check for the level of chili “heat,” adding more chili if needed to reach the cooks’ desired level of spiciness. Add additional salt to taste at this time if desired. Simmer for additional 30 minutes, then check for level of soupiness or thickness. If thicker mixture is desired, cook on medium boil for additional 10 minutes to boil off water and thicken the mixture. If soupier mixture is desired, add water to taste, then simmer for additional 10 minutes. Remove from heat and serve immediately.
